Spanish Soup + Wine


IMG_0036Sunny Sundays might call for light salads with fresh ingredients from the market and a crisp glass of wine on the patio. However, Fall has arrived in Vancouver and the rain is the new normal with leaves falling and shorter daylight hours. So Sundays are now comfort food days for me and a time to add fish into my diet as I have more time to plan a meal with or around it.

A go-to website for me is Jamie Oliver , because I like the simplicity and style of his cooking and recipes. I started off my day playing some spanish guitar music, which led me in the direction of something spicy yet flavourful, and I found this recipe: Spanish Fish & Chorizo Soup.

Off to the market I went, and I needed to find a replacement for bream and pollock – not so popular around Vancouver, but I trust the guys at Seafood City at Granville Island. As a good substitution, they suggested Cod and Snapper – not too oily but good flavour. So keep that in mind.

 

 

Next up – finding a wine that can be added to the recipe as well as enjoyed while cooking and eating the soup. My first go-to was a Spanish varietal Macabeo (recently enjoyed), but with the suggestion of Liberty Wine Merchants staff I went with the Altos Rioja Blanco 2012 – a blend of Viura and Malvasia, and quite honestly it was perfect!

And as I was enjoying this very flavourful soup along with a glass of wine, I realized I haven’t been to my favourite spanish spots in a while: Sardine Can and Espana.

Sardine Can – a little spanish style bar, right in the heart of Gastown with many great sharable dishes and spanish wines. In this picture the mushrooms in sherry cream sauce (Champiñones) – you’ll be addicted with bread in hand! And the spicy garlic prawns (Gambas al ajillo). Order a number of dishes, and enjoy!

Espana – is a gem in the Westend of downtown Vancouver. Offering a more sit-down “stay a while” atmosphere with Spanish tapas and a great wine list. No reservations, but if you have to wait, it will be worth it!
